Persian Saffron Ice cream

Saffron ice cream is also known as “Bastani Sonati” is one of the most delicious Persian desserts. It has a unique taste for the combination of saffron and pistachios. It’s been served in Iran for a long time and still is so popular among Iranians. They serve it at their family gatherings in the summertime. Today we have provided its easy-peasy recipe for you to enjoy!

Persian saffron ice cream
Servings: 6           Prep time: 20 minutes            Total time: 6 hours

Ingredients :

4 cups whole milk
1 tablespoon Organic Saffron
500 gr Sugar
½ cup Rosewater
1 tsp vanilla extract
100 gr heavy cream
50 gr pistachio slices
1 tablespoon almonds slices

 

Directions :

1.For making saffron ice cream, first, you need to pour the cream into a tray and spread it on the bottom of the tray with a flat object until it reaches a diameter of 2 mm. Then place it in the freezer to chill.

2.Add the milk to a saucepan and bring it to a simmer over medium-low heat, at this time brew saffron and add it to the milk with rose water.

3.Now mix the sugar and almonds in a bowl and gradually add it to the milk and stir until the mixture thickens. Then remove from the heat and place it on ice to chill and keep stirring until the mixture stretches.

4.Put the mixture in the freezer for 30 minutes. Then take it out and whisk the ice cream again with a mixer and return it to the freezer. Repeat this process for 4 or 5 times to make sure the ice cream is frozen.

5.Take the ice cream and the frozen cream out of the freezer and cut the cream with a knife into small pieces and add them to the ice cream. Also, add the pistachio slices to the ice cream. Stir the ice cream so the frozen cream and pistachio will be scattered, and if you like, you can add a little cardamom to the ice cream at this point.

6.Keep the ice cream in the freezer for 2 more hours to be fully prepared.
