“Jujeh kebab” Persian saffron chicken kebab

Persian saffron chicken kebab is also known as “Jujeh kabab” is one of the most delicious Persian food that you can find on the menu of every restaurant in Iran. You can cook chicken kebabs in the oven or grill them with a stick. Most people in Iran marinate the chickens in saffron, onion, green pepper, and lemon overnight to have a great flavor. Ingredients:

2 large onions
1 medium chicken
50 gr butter
Small piece of Ginger
100 gr Yogurt
4 tablespoons oil
salt and black pepper
1 tbsp Brewed saffron
6 to 8 tablespoons Sour lemon juice

How To Marinate :

1.First, choose a suitable bowl and chop the onions into small pieces after peeling them. Wash the chickens and chop the chicken to the size of a grilled chicken and add it to the bowl containing the onions.

2.Then add lemon juice, olive oil, brewed saffron, yogurt, grated ginger, and salt and black pepper to the bowl containing onions and chicken and mix the ingredients well to reach all parts of the chicken. After mixing the ingredients, cover the bowl and put it in the fridge for 4 hours. You can also put them in a zip-lock bag. Take out the chickens after 4 hrs or overnight.

3.Next, skewer the chicken. place the similar pieces on a skewer. Make sure to separate the onion pieces or the remaining onion on the chicken burn very quickly and affect the taste of the kebab.

4.Once the grill is ready, place the skewers on the grill and rotate continuously until the chicken is grilled evenly. Meanwhile, melt the butter and mix it with a small amount of brewed saffron. Spread the butter sauce on the kebabs before removing them from the grill. Rubbing the butter and saffron mixture softens the kebabs and prevents them from drying out. It makes the taste and color of the grilled chicken better.

5.You can serve chickens kebabs with bread or rice.

Some believe that onions destroy the color of saffron. So they flavor the chickens with saffron first and then add onions, green peppers, and other ingredients. In this way, less saffron is consumed because peppers and onions do not need saffron.
