Refreshing Mango Lassi with Saffron

At the peak of the mango season in the summer, one of the best ways to enjoy this sweet fruit is by making a mango lassi with saffron. Not only is this smooth-like drink delicious, filling, and healthy, it will also help you cool down in the hot summer heat.

In case you haven’t heard of a “Lassi” before, it originates from the Indian subcontinent and refers to any yogurt-based drink. In traditional mango lassi recipes, only yogurt is used. But of course, at Zarlux Saffron no recipe is complete without a dash of saffron and a little spice! So, we have added a couple of extra but very accessible ingredients such as milk, which helps to bloom the saffron, and aromatic cardamom.

Zarlux Tip: If you prefer your mango Lassi to be thinner consistency, you can add more milk. 

Serves: 2 people            Total Time: 10 Minutes

Ingredients:

2 Ripe mangoes
2 Cup Whole Milk Plain Yogurt
1 Teaspoon ground Zarlux Negin Saffron
2 Tablespoon Milk
1 Teaspoon ground cardamom
2 Tablespoon crushed pistachios

Instructions:

  1. Warm the milk a few mins (shouldn’t reach a boiling point or spillover). Place the saffron in the milk and let it bloom for 10 minutes
  2. Peel and dice the mangoes into medium-sized pieces.
  3. Add the chopped mangoes, yogurt, saffron milk and cardamom in a blender and blend until smooth.
  4. Pour the lassi into serving glasses and garnish with pistachios.
  5. Serve immediately or keep chilled in the refrigerator to serve later.
